How to prepare Potato

Preparation shifts this noticeably: boiled or steamed sits closest to the profile above; roasted or baked is drier and so more Vata-provoking; mashed with butter or ghee is the least Vata-provoking, as the fat offsets the dryness. Deep-fried is a different food again and is not covered by this entry.
