Rennet varies and this generic entry cannot tell you which you have. Traditional Parmigiano Reggiano, and many cheddar and gouda styles, are set with animal (slaughter-derived) rennet and are therefore not vegetarian; a great many modern hard cheeses use microbial or vegetable rennet and are.
